Chicken breast with Sautéed Onions and Spices

Eitan thinks of this dish of chicken thighs cooked with fried onions as his mother “at her best.” His particular reverence for it comes from how delicious and easy it is to make. The smell of cooking onions that fills the home when this dish is being made brings back sweet memories of his childhood in Israel.

Serves 3-4 people


Oil- any vegetable oil is good
Onions (4 large)
Chicken breast- 1 pound
Paprika- sweet
Paprika- hot
Mixed grill spice (can be purchased in a Middle eastern store)


In a deep frying pan put about 1 inch of oil (canola, olive or soy is good)
Heat oil
Slice onions in thin rings
Add the onions to the heated oil- cook until almost brown
Add the spices to the onions:
About 1 teaspoon of turmeric
1 teaspoon of paprika (sweet)
1/4 teaspoon of hot paprika *
1 teaspoon of mixed grill spice
Salt to taste (about 1/4 teaspoon)
Pepper to taste
Turn the onions in pan and place chicken breast on top of onions
Cook until chicken is done and onions of caramelized

* Hot paprika is optional

Serve over rice.
