Sonia’s Sand Tarts

Leah’s grandmother, Sonia doesn’t spend a lot of time cooking, but when she does it’s because she’s making her famous sand tarts.  Called sand  tarts because of the slightly gritty texture, these cookies appear in mass quantities at every major event in Leah’s family. 


*1lb butter
10 Tbs. sugar
2 tsp. vanilla
1 tsp. almond extract
5 cups flour
a bit if salt
2 cups finely chopped pecans
1 16oz box candied cherries


Preheat oven to 325 degree. Cream butter and sugar. Add vanilla and almond extract. Add flour and salt in batches. Add pecans, stir until blended. Use hands to blend and roll into walnut size balls. Cut cherries in half and place half of candied cherry on top of each ball. Bake until lightly browned, about 20 minutes. While hot, sprinkle with sugar.

Makes 125 cookies.
