Aaron Israel


Aaron Israel is the co-chef and co-owner of Shalom Japan in Williamsburg, along with his wife, Sawako Okochi. Aaron grew up in Great Neck, NY and started experimenting with cooking at a very young age. Before opening Shalom Japan, Aaron was the opening sous chef at Torrisi Italian Specialties and then the chef of Mile End. The concept for Shalom Japan came from Aaron and Sawa’s mutual interest in exploring and sharing their respective cultural backgrounds. Like their marriage, the food at Shalom Japan is a union of their Japanese and Jewish heritages. The lox bowl may be the most straightforward embodiment of their melding; sushi rice topped with house cured salmon and all the fixings somehow makes perfect sense. Just like them.
